الملخص
يكثر استعمال حليب الابل في المناطق الصحراوية القاحلة وهو ذو اهمية كبيرة من الناحية الصحية بسبب محتواه الكيميائي وفوائده الصحية التي تزداد بعد تخميره نتيجة تحلل مكوناته بفعل بكتريا حامض اللاكتيك ومن هذه المكونات هي البروتينات التي بتحللها تنتج الببتيدات النشطة حيويا والتي تساعد في الوقاية وعلاج العديد من الامراض وبذلك يعد من الاغذية الوظيفية لتغذية الانسان و لعلاج المشاكل الصحية في هذه المناطق لأرتفاع قيمته الغذائية وسهولة هضمه . ثبت ان لحليب الابل العديد من التأثيرات الصحية المفيدة كالانشطة المضادة للبكتريا لأحتواءه على اللاكتوفيرين واللايسوزايم والكلوبيولين المناعي واللاكتوبيروكسدير فضلا عن قدرته على تعديل الكوليسترول والسكري بالدم وامتلاكه الانشطة المضادة للاكسدة والمثبطة للانزيم المحول للانكوتنسين والمضادة للسرطان ولعلاج مشاكل الجهاز الهضمي وتزداد فعالية هذه الانشطة بعد تخمير حليب الابل ببكتريا حامض اللاكتيك والبروبايوتك نتيجة لنشاط هذه البكتريا على تحليل مكونات الحليب من دهون وبروتينات وكربوهيدرات الى احماض دهنية وببتيدات وسكريات متعددة مفيدة من الناحية الصحية وتساهم في اطالة العمر الخزني للمنتجات المتخمرة المصنعة من حليب الابل.
