دراسة بعض الخصائص الوظیفیة لصمغ التمر الهندی Tamarindus indica L.

الملخص
هدفت الدراسة الحالیة إلى استخراج الصمغ من التمر الهندی Tamarindus indica L ودراسة بعض الخصائص الوظیفیة. کانت قیم الذوبان والقدرة على الارتباط بالماء واللزوجة لصمغ بذور التمر الهندی: 87.4 و 17.54 و 13.7 على التوالی. أظهر صمغ بذور التمر الهندی قدرة ربط مختلفة للزیت تتراوح من 0.42- 0.73 (جم زیت / جم صمغ جاف) بسبب نوع الزیت المستخدم. أظهرت النتائج استقرار استحلاب أعلى من صمغ بذور التمر الهندی. أوضحت هذه النتائج إمکانیة استخدام صمغ بذور التمر الهندی کمثبت ومستحلب فی الصناعات الغذائیة.
